ILEX
Our very best Syrah and Petit Verdot make up the blend of ILEX, an eleganT, smooth and structured cuvée with a fresh acidity and velvety tannins.
After a manual harvest and a traditional vinification, the wine is matured during twelve to eighteen months in old barrels in order to make the best of this creative yet elegant blend between these two grape varieties - one originally from the Cévennes and the other from Bordeaux.

Our ILEX cuvée made its entry into La Tulipe Rouge's Languedoc Roussillon Wine Guide and obtained 1 tulip:
« A lush nose where the oak, generous, melts into a mass of candied black fruits and black pepper. The same density emanates from a velvety and warm mouth, nicely stretched on truffle and vanilla.
It is rich, ambitious and successful. »
THE STORY OF THIS WINE
From the range Les Grands Chênes
(The Big Oaks), this cuvée bears the latin name of the green oak, Ilex, which is deeply rooted into the estate's lands, as well as in the Cévennes area.​
The range is composed of two wines: Ilex and Cerris. Ilex et Cerris.
TASTING NOTES
ROBE
Beautiful intense colour with red garnet highlights.
NOSE
Aromas of blackberry and land after rain. Hints of blueberry and soft spices.
PALATE
Fresh with character, on the same aromatic grid.
AGING POTENTIAL
Long-keeping wine until seven years.
